Рисовая запеканка с цветной капустой в духовке. Рецепт с фото

Очень нежная и вкусная запеканка из белого риса с цветной капустой, морковью и луком в духовке — сытное и питательное блюдо для всей семьи и дорогих гостей. Благодаря сметане и яйцам она отлично держит форму в готовом виде. Ингредиенты можно выкладывать слоями или просто смешать их и посыпать сверху сыром, вкус блюда от этого не изменится.

Для приготовления запеканки вам потребуется:

  • капуста цветная — 150г
  • рис белый — 150г
  • морковь — 1 шт. (небольшого размера)
  • лук репчатый — 1 шт.
  • сыр — 80г
  • чеснок — 2-3 зубчика
  • сметана — 40г
  • яйцо — 2 шт.
  • масло растительное — 35г
  • соль — по вкусу
  • перец черный (молотый) — по вкусу

    • для подачи:

  • зелень свежая (любая).

Рецепт запеканки:

Нарезанный тонкими пластинками чеснок добавляем в сковороду с разогретым маслом. Как только чеснок начнет темнеть, выловить его шумовкой и выбросить. Перекладываем в чесночное масло нарезанный полукольцами лук и морковь, нашинкованную тоненькой соломкой. Обжариваем морковь и лук в чесночном масле 2-3 минуты.

Рис промываем, несколько раз меняя воду, и отвариваем в подсоленной воде 6-8 минут. Полуготовый рис откидываем его на сито или дуршлаг, чтобы стекла лишняя жидкость.

Огнеупорную форму смазываем слегка маслом и выкладываем на дно отваренный до полуготовности рис толстым слоем.

На рис распределяем овощную поджарку.

Цветную капусту промываем под холодной проточной водой, затем разбираем на средние соцветия Свежую цветную капусту слегка (достаточно 5 минут) отвариваем в подсоленной воде. Замороженную капусту оттаиваем при комнатной температуре, а затем выкладываем в форму следующим слоем.

Для заливки вбиваем в небольшую миску яйца, добавляем сметану и специи. Тщательно взбиваем венчиком все компоненты до образования однородной смеси.

Распределяем полученную смесь на цветную капусту ровным слоем.

Натираем сыр на средней терке и посыпаем последним слоем.

Отправляем форму с рисовой запеканкой в духовку на 25 минут. Запекаем при фиксированной на 180С температуре до приятной аппетитной корочки. Готовую запеканку посыпаем рубленой зеленью и подаем рисовую запеканку с овощами под золотистой сырной корочкой порционными кусками как полноценное блюдо. Приятного аппетита!
