Фриттата с грибами шимеджи и спаржей. Рецепт с фото

Фриттата — итальянский омлет, который в нашем представлении больше похож на запеканку, т.к. готовят его с разными начинками. Если в классическом рецепте фриттату сначала жарят, а затем доводят до готовности в духовке, то сегодня отступим от правил и сразу запечем фриттату в духовке в порционных формочках. Для начинки возьмем спаржу и новый для меня продукт — корейские опята шимеджи. Шимеджи ценят за нежный вкус и за то, что в готовом виде они отлично держа форму. Получилось вкусно и красиво.

Для приготовления вам потребуется:

  • грибы шимеджи — 1 упаковка
  • спаржа зеленая — 4 побега
  • яйцо — 4 шт.
  • молоко (или сливки) — 30 мл
  • тимьян сушеный — 1/2 ч.л.
  • лук репчатый — 1/2 луковицы
  • чеснок — 2 зубчика
  • масло растительное — 2 ст.л.
  • масло сливочное — 15г
  • соль — по вкусу
  • перец черный (молотый) — по вкусу

    • дополнительно:

  • сливочное масло — 10г.

Рецепт :

Перед обжаркой у шимеджи надо срезать жесткое основание, выбросить его, а остальные грибочки хорошо промыть.

У спаржи овощечисткой срезать с побегов грубые волокна, в результате чего буквально у самого основания ростка появится юбочка из этих волокон, которую надо отрезать. Каждый очищенный росток разрезать по длине на отрезки по 2-3 см.

Зубчики чеснока придавить плоской стороной лезвия ножа, снять шелуху и мелко порубить каждый. Половинку луковицы мелко нарезать.

В глубокой сковороде растопить сливочное масло, влить растительное. В масло положить грибы, посолить, обжаривать, помешивая примерно 5 минут. Добавить чеснок с луком и продолжать обжаривать, пока грибы не дойдут до полной готовности.

В этот момент переложить в сковороду нарезанную спаржу, перемешать и продолжать готовить 1-2 минуту. Снять сковороду с плиты.

В миске слегка размешать вилкой или венчиком яйца с молоком/сливками. Посолить, приправить сушеным тимьяном и молотым черным перцем.

Формочки для запекания щедро смазать сливочным маслом. Разложить по формочкам начинку — жареные грибы шимеджи со спаржей.

Залить яйцами. Наполняйте формочку чуть больше, чем наполовину.

Запекать фриттату в разогретой до 180С духовке до готовности яиц. Они должны увеличиться в объеме и хорошо пропечься, как на фото. После выпечки фриттата немного опадет, но все равно будет выглядеть аппетитно.
