Приготовим говяжье сердце по мотивам венгерского рецепта. За основу возьмём пёркёльт, который выглядит как густое рагу из мяса и овощей, приправленное сладкой паприкой. - бульон (или вода) — 1 стакан
- лук репчатый — 2 шт.
- картофель — 3 шт.
- перец сладкий — 2 шт.
- соль — по вкусу

- паприка сладкая (молотая) — 1 ст.л.
- масло растительное для жарки.
Рецепт рагу:
Говяжье сердце промыть под холодной водой, положить в миску подходящего объема, замочить на 2-3 часа в холодной воде. Затем сердце еще раз промыть, переложить на разделочную доску, обсушить бумажными полотенцами. Срезать с сердца всё лишнее — пленки, лишний жир и т.п. Часть жира можно оставить, на нем кусочки сердца хорошо подрумянятся. Подготовленное говяжье сердце нарезать небольшими кубиками.
Картофель очистить, нарезать кубиками примерно того же размера, что и сердце. Очищенный лук нарезать поукольцами. Очищенный чеснок мелко порубить. Сладкий перец разрезать пополам, удалить семена и перегородки, затем произвольно нарезать.
В глубокой сковороде или сотейнике разогреть растительное масло, добавить лук и пасеровать на небольшом огне, помешивая. Затем прибавить огонь и слегка подрумянить лук. В конце добавить измельченный чеснок и перемешать.
Отправить в сковороду сердце. Помешивая, готовить, пока кусочки сердца начнут подрумяниваться.
Переложить в сковороду сладкий перец
и картофель. Посолить и поперчить.
Посыпать сладкой паприкой. Размешать, немного прогреть и залить бульоном. Бульон может быть мясным или овощным. Если нет бульона, залейте содержимое сковороды холодной питьевой водой. Прикрыть сковороду крышкой и готовить рагу около 40 минут. Готовое рагу из жареного сердца с картошкой и сладким перцем переложить на тарелку и подавать со свежими или солеными овощами.
