Суп из говядины с брокколи. Рецепт с фото
Для мясного супа можно взять не обычную капусту, а брокколи. Вроде мелочь, но получается вкусно и по-новому. Конечно, лучше использовать свежую брокколи, но я ограничилась упаковкой замороженной капусты. И не делала пассеровку из лука с морковью, поэтому вкус супа с говядиной и брокколи получился по-настоящему летний.
Для приготовления супа вам потребуется:
- говядина (на кости) — 500г
- лук репчатый — 1 шт.
- морковь — 1 шт.
- капуста брокколи (замороженная) — около 200г
- картофель — 2 шт. (среднего размера)
- соль — 2 ч.л. (по вкусу)
- лавровый лист — 2 шт.
- перец душистый (горошком) — 3-4 шт.
- зелень свежая — по вкусу.
Рецепт супа:
Мясо на косточке промыть под холодной проточной водой, положить в кастрюлю, залить примерно 2 л воды и поставить на небольшой огонь. Как только вода начнет закипать, уменьшить огонь до маленького, варить, снимая пену. После того, как пена перестанет образовываться, добавить горошины душистого перца и зелень. Варить под полуприкрытой крышкой, снимая пену, около 2 часов до полной готовности мяса.
Бульон посолить.
Пока варится мясной бульон, подготовить овощи для супа. Брокколи оставить размораживаться прямо в пакете в холодильнике. Затем достать из пакета, при необходимости крупные соцветия разрезать на несколько частей.
Морковь и лук очистить. Морковь нарезать соломкой или натереть на крупной терке. Лук нарезать произвольно.
Картофель очистить и нарезать небольшими кубиками.
В кастрюлю с мясным бульоном добавить картофель. Варить примерно 5 минут.
Как только суп повторно закипит, добавить лук и морковь. Положить в кастрюлю лавровый лист и варить на небольшом огне примерно 10 минут.
В конце варки добавить капусту брокколи и свежую рубленую зелень. Для варки брокколи достаточно 5 минут, она должна немного похрустывать в супе. Точное время варки капусты определяйте сами, на вкус. Кастрюлю с мясным супом и брокколи снять с плиты. Можно разливать суп по тарелкам и подавать на стол. Вкусно. Приятного аппетита!
