Овощной салат с креветками и мидиями. Рецепт с фото

Легкий салат из морепродуктов с овощами можно приготовить на ужин. Морепродукты подбирайте на свой вкус: это могут быть замороженные или консервированные креветки, мидии, морской коктейль в масле. В этом рецепте салата креветки и мидии смешали с бланшированной овощной смесью из брокколи и цветной капусты. Для заправки подойдет смесь растительного масла с натуральным уксусом.

Для приготовления салата вам потребуется:

  • овощная смесь (замороженная брокколи и цветная капуста) — 400г
  • перец сладкий (крупный красный) — 1 шт.
  • фасоль спаржевая — 200г
  • уксус яблочный — 1 ст.л.
  • масло оливковое — 2 ст.л.
  • оливки зелёные (консервированные) — 1 банка
  • чеснок — 3 зубчика
  • коктейль из морепродуктов — 200г
  • перец черный (молотый) — по вкусу
  • соль — по вкусу

    • для заправки:

  • масло растительное (оливковое) — 2 ст.л.
  • уксус бальзамический — 2 ч.л.

Рецепт салата:

Морепродукты приготовить по инструкции на упаковке. Не забудьте почистить креветки, удалив не только панцирь, но и кишку.

Вскипятить воду, посолить и бланшировать в ней замороженную цветную капусту и брокколи буквально 1-2 минуты. Откинуть на дуршлаг.

Если капуста свежая, то варить до готовности. На это потребуется около 4-5 минут.

Свежий перец поместить в духовку, разогретую до 210С, и запекать 15 минут. Затем завернуть печеный перец в пакет, остудить, удалить кожицу и порезать соломкой. Если используете для салата замороженный перец, достаточно обжарить его вместе со стручковой фасолью.

Обжарить в сковороде с растительным маслом чеснок, нарезанный на тонкие пластины. Чеснок удалить, переложить в сковороду фасоль и перец, обжарить 3 минуты на среднем огне, поперчить и посолить.

Смешать в салатнике подготовленные овощи, оливки и морепродукты, отложив несколько креветок в сторону для украшения готового салата.

Для салатной заправки в небольшой миске взбить венчиком или вилкой бальзамический уксус с оливковым маслом. Полить соусом салат, аккуратно перемешать и можно подавать на стол. Овощной салат с креветками, брокколи и цветной капустой готов. Приятного аппетита!
