Саядия — арабский плов с рыбой и картофелем. Рецепт с фото
На Ближнем Востоке и Средиземноморье рис готовят не только с мясом, но и с рыбой. Саядия — арабский плов с рыбой и картофелем, популярный от Ливана до Йемена. Рыбу выбирают в зависимости от сезона, её размер значения не имеет. Подходит даже мелкие тушки. Удобнее готовить плов с рыбным филе, но можно, как в этом рецепте, взять выпотрошенные тушки и нарезать их кусочками вместе с костями. Когда плов будет готов, удалить из рыбы косточки и разложить филе поверх плова.
Для приготовления вам потребуется:
- рис — 300г
- скумбрия с/м — 2 шт. (около 600г)
- лук репчатый — 2 шт.
- картофель — 2 шт.
- куркума — 1 ч.л.
- кориандр (в зернах) — 1 ч.л.
- зира (кумин) — 1 ч.л.
- соль — по вкусу
- перец черный (молотый) — 1/2 ч.л.
- лимон (сок) — 1/4 шт.
- масло растительное для жарки.
Рецепт :
Рис несколько раз промыть в холодной воде, оставить миске, залить холодной водой на 40 минут. Через 40 минут рис откинуть на сито и дать воде стечь.
Скумбрию промыть, выпотрошить, обтереть бумажными полотенцами снаружи и внутри брюшка. Срезать все плавники и отрубить голову. Нарезать тушку кусочками длиной по 4-5 см. Посыпать солью, молотым черным перцем и полить соком дольки лимона. Дать рыбе промариноваться примерно 30 минут.
Подготовить овощи для плова. Лук очистить и нарезать полукольцами. Очищенную морковь натереть на крупной терке или нарезать соломкой. Можно использовать терку для корейской моркови. Очищенный картофель нарезать кружочками толщиной 5-7 мм. Толще не надо.
В глубокой сковороде или сотейнике разогреть растительное масло и обжарить в двух сторон до подрумянивания картофельные кружочки. Переложить картофель на тарелку.
Следом за картофелем выложить на сковороду кусочки рыбы срезом вниз. Обжаривать до появления румяной корочки на рыбе сначала с одной стороны, затем — с другой. Жарить до готовности не надо, только подрумянить. Переложить кусочки скумбрии на тарелку и прикрыть фольгой, чтобы они оставались в тепле.
На сковороду налить еще немного масла, прогреть и обжарить до прозрачности сначала лук, затем добавить морковь. Готовить всё вместе, помешивая 1-2 минуты. Приправить овощную пассеровку куркумой, зирой и кориандром. Перемешать, чтобы специи равномерно распределились в овощной пассеровке и прогрелись в масле.
Теперь можно добавить рис. Пересыпать его в сковороду с овощной пассеровкой, перемешать и слегка обжарить, чтобы рис пропитался маслом и специями со сковороды. Посолить по вкусу.
Когда рис равномерно окрасится куркумой, станет золотисто-желтым, разделить его на 2 примерно равные части. Половину риса отгрести к бортику сковороды, вторую половину равномерно распределить по дну.
На слой риса выложить обжаренный картофель
и кусочки обжаренной рыбы. Аккуратно переложить с края сковороды рис на картофель с рыбой, чтобы он был равномерно распределен поверх продуктов.
Залить рис с картошкой и рыбой питьевой водой, чтобы она полностью покрывала рис. Уровень воды должен на 1 см превышать уровень риса. Прикрыть сковороду крышкой, дать воде закипеть и уменьшить нагрев до минимального. Готовить плов с картофелем и рыбой примерно 15 минут, пока вода полностью не впитается в рис, и он не пропарится до готовности. Снять со сковороды крышку, аккуратно перемешать рис, чтобы рыба и картофель равномерно распределились в плове.
Плов с рыбой и картофелем готов к подаче. Разложить его по тарелкам и по желанию украсить свежей зеленью. Приятного аппетита!
