Мармелад из красной смородины получается освежающе кисло-сладким, ярким. В отличие от других ягодных мармеладов, на срезе он не мутный, а как рубиновое стекло. Смородиновый мармелад сохраняет свой вкус и цвет до 3х месяцев, если положить его в контейнер с крышкой и оставить при комнатной температуре.
Для приготовления мармелада вам потребуется:
- красная смородина (пюре) — 400 мл
- сахар — 300г
- пектин — 1 пакетик.
Рецепт мармелада:
Пюре проварить с сахаром около 10 минут, добавить остатки сахара с пектином и варить 5 минут.
Красную смородину промыть, откинуть на дуршлаг, и когда вся вода с ягод стечет, удалить веточки. Ягоды без веточек пересыпать в небольшую кастрюлю, влить примерно 1/4 стакана воды и поставить на слабый огонь. Довести под крышкой до кипения. Когда ягоды начнут лопаться, снять кастрюлю с огня.
Переложить смородину в сито и протереть, чтобы удалить семена и кожицу.
Ягодное пюре перелить в небольшой ковш, всыпать сахар (1-2 ст.л. сахара отложить в сторону), перемешать и поставить на слабый огонь. Довести смородиновое пюре с сахаром до кипения и варить пару минут, непрерывно помешивая.
В небольшой чашке смешать пектин с отложенным сахаром и высыпать в смородиновое пюре. Активно перемешать, чтобы не образовались комочки. Уменьшить огонь и, помешивая, варить ягодное пюре с сахаром и пектином около 5 минут.
Перелить загустевшую массу мармелада в форму подходящего размера, предварительно застелив её пекарской бумагой. Оставить при комнатной температуре на 24 часа. Через сутки застелить бумагой для выпечки плоскую рабочую поверхность, на неё перевернуть мармелад и оставить еще на 24 часа. Готовый смородиновый мармелад нарезать на кусочки влажным ножом. По желанию каждый кусочек мармелада обвалять в мелком сахаре или сахарной пудре. Мармелад из красной смородины хранится в контейнер с крышкой при комнатной температуре до 3х месяцев.
