Рыбное хе — это блюдо с корейскими корнями, а кефаль – рыба, которую часто можно встретить на рынках недалеко от Черного и Азовского морей. Именно эта рыба из российских широт прекрасно подходит для корейского рецепта. В меру жирная, она не будет слишком сухой в готовом виде. Для получения нужного вкуса хе оставляют в холодильнике на верхней полке до 3-4 суток. Для рецепта понадобится как минимум одна потрошеная кефаль без головы, хвоста и внутренностей. Сразу необходимо предупредить любителей соленой икры и молок — этот рецепт не подходит для их засолки.
Для приготовления вам потребуется:
- кефаль — 1 шт. (среднего размера)
- лук репчатый — 5-6 шт.
- соль — по вкусу
- масло растительное – 1/2 стакана
- уксус рисовый – 2 ст.л.
Рецепт :
Тушку кефали почистить, выпотрошить, промыть под холодной водой и хорошо промакнуть бумажным полотенцем, чтобы убрать излишек влаги. Зачистить ножом внутреннюю поверхность рыбы от черной пленки, если имеются куски нутряного жира, их удаляют.
Разрезать подготовленную рыбью тушку на куски толщиной примерно 2.5-3 см, отрезая плавники и голову.
Лук очистить, нарезать кольцами: его понадобится большое количество, от 5 и более средних луковиц на 1 небольшую тушку рыбы.
Лук и рыбы сложить в миску. Лук пожамкать руками, чтобы он дал сок. Теперь добавить несколько ложек соли и перемешать с рыбой, не трогая лук.
Разогреть растительное масло и сразу же вылить кипящее масло на рыбу. Затем полить рыбу рисовым уксусом. Прикрыть миску с рыбой крышкой или пищевой пленкой и поставить мариноваться в холодильник на 12-15 часов. Готовность определяют по цвету рыбы: филе кефали становится менее прозрачным, а по вкусу рыба уже не напоминает сырую. Подать хе из кефали можно как самостоятельную закуску или с гарниром на ваш вкус. Лук, который добавляли к хе из рыбы тоже можно подавать на стол. Приятного аппетита!
