Горбушу тоже можно готовить на мангале, хотя она и суховата для этого. Главное, не передержать её над углями, тогда получится вкусно. Конечно, будет вкуснее, если горбуша свежая, но мне попалась затерянная во льдах морозилки рыба, которую надо было как-то спасти. Чтобы рыба не прилипала к решетке, смажьте её или решетку небольшим количеством растительного масла.
Для приготовления горбуши вам потребуется:
- горбуша — 1 шт. (около 2кг)
- лимонный перец — 1-2 ч.л.
- соль — по вкусу
- масло растительное — 1 ч.л.
- лимон
- зелень.

Рецепт горбуши:
Горбушу почистить, выпотрошить, стараясь не задеть желчный пузырь. Если он лопнет, рыба будет горчить! Голову отрезать, тушку промыть, тщательно удалив черную пленку от внутренностей в брюшке.
Все плавники срезать (это удобно делать ножницами).
Уложить тушку кожей вниз, распластать и сделать глубокий надрез вдоль позвоночника с внутренней стороны.
С внешней и внутренней стороны натереть горбушу лимонным перцем. Я его готовила сама, добавляла в смесь соль, поэтому дополнительно солить рыбу не надо. Сложить рыбу в пакет и убрать в холодильник хотя бы на 1 час.
Подготовить угли в мангале, хорошо их прокалить. Обсушить рыбу от маринада бумажным полотенцем, уложить горбушу на решетку, предварительно смазав растительным маслом. Готовить рыбу над углями примерно 7-8 минут с каждой стороны, часто переворачивая.
За это время небольшая горбуша хорошо пропечется, но не пересохнет. Готовую горбушу на гриле снять с решетки, переложить на блюдо и полить соком лимона. Подавать рыбу со свежими овощами и зеленью. Приятного аппетита!
