Японские панкейки (Japanese Souffle Pancake). Рецепт с фото
Пышные, воздушные японские оладьи пекут на сковороде. Идеально, если у вас найдутся формочки для них (у меня вместо форм были кольца для формовки салата). Если нет формочек, то сделайте из пекарской бумаги кольца высотой примерно 5 см и диаметром 7 см. А дальше готовьте пакейки, как описано в этом рецепте. Не думайте, что это сложно. Рецепт простой, и стоит обратить на него внимание, если хотите попробовать оладьи, похожие на бисквит.
Для приготовления вам потребуется:
- яйцо С1 — 2 шт.
- сахар — 40г
- молоко — 50 мл
- мука — 60г
- соль — 1 щепотка
- разрыхлитель теста — 1 ч.л. (без горки)
- ванильная эссенция — 1 ч.л.

Яйца вымыть, разделить на желтки и белки.
Взбить белки в устойчивую пену, добавив щепотку соли и примерно 1/6 часть сахара.
В другой миске растереть добела яичные желтки с остальным сахаром.
В яично-сахарную массу влить молоко, размешать.
Теперь в эту же миску просеять муку с пекарским порошком.
Размешать венчиком, чтобы получилось гладкое, однородное тесто, как на фото.
Теперь по частям добавить взбитые белки, аккуратно размешивая их, двигая венчиком снизу вверх, чтобы белки не осели. Тесто для японских панкейков готово.
Разогреть сковороду на очень маленьком огне. Пока сковорода разогревается, смазать с внутренней стороны формы для панкейков (у меня металлические кольца для формовки салатов диаметр 7 см и высотой 5 см). Если нет готовых форм, то сделайте их из пекарской бумаги. Или пеките панкейки совсем без форм.
Смазать сковороду растительным маслом, протереть бумажной салфеткой и установить формы. Наполнить формы тестом для оладий на 2/3 объема.
Прикрыть крышкой и готовить 10 минут.
За это время тесто заметно увеличится в объеме.
Перевернуть формы с тестом и продолжить готовить под крышкой еще примерно 7 минут.
Для надежности снять со сковороды один панкейк, достать из формы и разрезать пополам. Если он пропекся, значит и остальные оладушки готовы. Перенести из на тарелку или доску, тонким ножом прорезать по окружности, чтобы панкейки легко выпрыгивали из форм. Воздушные японские панкейки готовы к подаче. Можно украсить их сахарной пудрой и подавать со сладким соусом или мороженым. Приятного аппетита!
